Sustainable food systems engineer dedicated to food and nutrition security

Kiruba Krishnaswamy, PhD is an Assistant Professor with a joint appointment in Food Sciences and Biomedical, Biological & Chemical Engineering.  Her work employs sustainable food process engineering to address the interconnected challenges of food and nutrition security.  This includes exploring opportunities to reduce food loss/waste through value-added products and improving post-harvest preservation of fruits, vegetables, ancient grains, and underutilized agro-forestry crops and medicinal plants. She has managed three large scale food fortification projects with micronutrients to address hidden hunger. She has experience working with food industry, NGO’s in India, Canada, Kenya and the United States.
